Recipe Makeover: Fried Green Tomatoes

Have you ever had fried green tomatoes? You know, made the southern way… fried in bacon grease and dunked in mayo sauce? (What a great excuse to make bacon!) The thought will either have you prepping in the kitchen, or make you shout at the ceiling “why can’t that be healthy!”

Thankfully we have perfected a more healthy, vegetarian, but still absolutely delicious recipe for fried green tomatoes!

The Shopping List:

4 medium GREEN tomatoes **
2 large eggs **
1/2 cup buttermilk **
1 cup all purpose flour or whole wheat flour
1/2 cup panko or Abma’s seasoned bread crumbs **
1 cup cornmeal
2 tsp salt
1 tsp pepper
olive oil **

**These items can be found at our market! Tomatoes, while in season, are homegrown on our farm. Our eggs are always fresh from our own chickens.

Directions:

Preheat oven to 400 degrees. Slice tomatoes 1/4 inch thick. In a shallow bowl, whisk together eggs, buttermilk, 1 tsp salt, and 1/2 tsp pepper. Fill another shallow bowl with flour. In a third shallow bowl, whisk together bread crumbs, cornmeal, 1 tsp salt, and 1/2 tsp pepper. Coat a baking sheet with olive oil. One tomato slice at a time, coat with flower, coat with egg mixture, then coat in bread crumbs. Repeat with remaining slices and place on baking sheet. Drizzle olive oil on all slices and place in preheated oven for 15 minutes. Turn over tomatoes and bake for an additional 10 minutes.
