A delicious salsa made with homegrown tomatoes, jalapenos, and corn.

Ingredients
2
red onion
small, chopped
1/2
tsp
salt
2
limes
squeezed, just the juice
2
jalapeno pepper
finely chopped, seeded for less heat
4
tomato
ripe, medium size, chopped
1
cup
corn
fresh
1/2
cup
cilantro
chopped
Instructions
Place the chopped onion in a bowl. Sprinkle with salt, squeeze the lime juice over, and set aside for 15-20 minutes.
Add the chopped peppers, tomatoes, corn, and cilantro to the onion mixture and stir.
Optional – Add chopped mango or chopped pineapple for a little sweetness.
