Instructions
  1. Place the chopped onion in a bowl. Sprinkle with salt, squeeze the lime juice over, and set aside for 15-20 minutes.
  2. Add the chopped peppers, tomatoes, corn, and cilantro to the onion mixture and stir.
  3. Optional – Add chopped mango or chopped pineapple for a little sweetness.
