Instructions
  1. Heat oil in a 3-quart heavy saucepan over moderate heat.
  2. Add scallions, garlic, and cook, stirring occasionally, until scallions are tender and lightly browned, 6 to 8 minutes.
  3. Add tomatoes, broth and water, salt, and pepper.
  4. Simmer, partially covered, until tomatoes are tender, 20 to 30 minutes.
  5. Season soup with salt and pepper to taste.
Recipe Notes

Garnish with sour cream (optional).

Note: Mix red tomato with the green for a sweeter soup.
