Stuffed Zucchini
  1. Preheat oven to 400 degrees.
  2. Slice zucchini in half lengthwise. Scoop out a little flesh from inside each half so that it resembles a boat. Place zucchini boats in a 9×13 baking or casserole dish.
  3. In a medium sauté pan over medium-high heat, add the olive oil. Then, add the garlic, onion, chopped zucchini flesh, tomatoes, salt, and pepper. Cook until softened, about 8 minutes.
  4. In a medium bowl, add the parmesan, mozzarella, breadcrumbs, and parsley; mix to combine.
  5. Add sautéed veggies and mix well. Spoon mixture into the zucchini boats.
  6. Place in the oven and bake until golden on top, 30 to 40 minutes,
