Instructions
Preheat oven to 400 degrees.
Slice zucchini in half lengthwise. Scoop out a little flesh from inside each half so that it resembles a boat. Place zucchini boats in a 9×13 baking or casserole dish.
In a medium sauté pan over medium-high heat, add the olive oil. Then, add the garlic, onion, chopped zucchini flesh, tomatoes, salt, and pepper. Cook until softened, about 8 minutes.
In a medium bowl, add the parmesan, mozzarella, breadcrumbs, and parsley; mix to combine.
Add sautéed veggies and mix well. Spoon mixture into the zucchini boats.
Place in the oven and bake until golden on top, 30 to 40 minutes,
