Ingredients
- 2 zucchini large
- 1/4 cup olive oil
- 1 clove garlic
- 1 onion chopped
- 2 tomato medium size, chopped
- kosher salt to taste
- pepper to taste
- 1 cup Parmesan cheese finely grated
- 1 cup mozzarella shredded
- 2 tbsp parsley fresh, chopped

Instructions
- Preheat oven to 400 degrees.
- Slice zucchini in half lengthwise. Scoop out a little flesh from inside each half so that it resembles a boat. Place zucchini boats in a 9x13 baking or casserole dish.
- In a medium sauté pan over medium-high heat, add the olive oil. Then, add the garlic, onion, chopped zucchini flesh, tomatoes, salt, and pepper. Cook until softened, about 8 minutes.
- In a medium bowl, add the parmesan, mozzarella, breadcrumbs, and parsley; mix to combine.
- Add sautéed veggies and mix well. Spoon mixture into the zucchini boats.
- Place in the oven and bake until golden on top, 30 to 40 minutes,
